National Pancake Day


Isn’t there a national day for just about everything these days!? Sometimes it’s a great day to participate (like last week’s “National Talk Like a Pirate Day”) and sometimes it’s not so much. Tomorrow, one of I’m sure many other options, is National Pancake Day! That’s a good day to participate in, don’t you think? I’d like to share my go to pancake recipe with you all in honor of the celebrated event. Hopefully, it will be a fresh new idea for your family breakfast.


Cinnamon Banana Pancakes



  • 1 egg
  • 1 cup unbleached flour
  • 3/4 cup organic milk
  • 1 TB raw sugar
  • 2 TB coconut oil
  • 3 tsp baking powder
  • 1/4 tsp Himalayan salt
  • 1 banana
  • cinnamon



  1. Mix together theĀ  flour, sugar, baking powder, and salt
  2. Whisk together egg, milk, and oil
  3. Combine all ingredients in a medium bowl
  4. Mash the banana and add to bowl, stirring just until combined
  5. Pour about a ladle full, or 1/4 of mix, onto a greased, preheated pan
  6. Sprinkle cinnamon on top of pancakes before serving with maple syrup


Makes about 4 large pancakes
